February Supper Club
For a short month full of medium celebrations
Happy February! We have a good month ahead of us: Olympics, Super Bowl, Valentine’s Day, President’s Day, and then Fat Tuesday and Ash Wednesday to kick off Lent.
These all strike me as medium celebrations — nothing major or particularly festive, but just fun enough to bring a little extra joy to the winter.
Next month, I’m pulling together some favorite meatless meals for Fridays!
🏈 for game day: Spinach and Artichoke Dip
This recipe from Emeril Lagasse is really decadent, but it’s a great contribution to a Super Bowl potluck. I like to serve this with toasted baguette slices instead of crackers.
💖 for Valentine’s Day: Clover Club
This bright pink cocktail is perfect for special occasions like Valentine’s Day. It’s super simple — gin, raspberry syrup, lemon juice, and an egg white — but looks elegant in a coupe.
🪻 for a busy day: Slow-Cooker Moroccan Chicken
I made this last weekend when I had grad school classes all day Saturday, and I was so happy to return home in the evening to a delicious meal that required almost nothing from me!
The aromatic spices are the key to this recipe. I used carrots instead of butternut squash because that’s what I had on hand, and I think pretty much any sturdy vegetable would be fantastic. Serve over couscous or rice with a spoonful of Greek yogurt.
🧅 for plenty of vegetables: Cajun One-Pan Shrimp and Sausage Bake
It’s Mardi Gras season, so this feels like a timely dish! I threw this together last night based on an Instagram reel I saw, so there’s no formal recipe. I needed to use up an assortment of veggies we had on hand (peppers, zucchini, potatoes, etc.), but this would be a great recipe for incorporating some seasonal veggies like Brussels sprouts, cauliflower, or sweet potato.
Season everything with Cajun spices, and roast the veggies on a sheet pan along with andouille sausage. Add the shrimp toward the end so they don’t overcook. Enjoy!
🍳 for Fridays in Lent: Huevos Enfrijolados (Eggs in Spicy Black Beans)
This dish packs a good amount of protein for a meatless dish, and it’s a nice alternative to fish on Fridays. I’m looking forward to making this!
🍊 for the side: Radicchio Salad with Citrus and Goat Cheese
I’ve reached the age where purchasing an unusual vegetable is a fun way to shake things up, and I’m looking forward to trying radicchio for the first time this month. It’s such a pretty “special occasion” vegetable, and it’s in season this time of year.




I love blood orange and didn’t know it was in season…time to make a favorite: a blood orange lavender poundcake (that happens to be vegan!?)
